St. George´s Mushroom is very popular in the northern regions of Spain, especially the Basque Country, Navarra and La Rioja, where it grows in April. White meat, thick, soft but compact and plentiful. Its aroma is mealy, soft and gentle but it has a penetrating flavor, a bit like nutmeg.
It is usually eaten sautéed with egg, stews, creams and sauces.
