The Shiitake Lentinus edodes (Japanese shi-itake or fungus Shii tree), is an edible mushroom native to East Asia. In the Japanese language (椎 茸); Chinese language is called (香菇), which means “fragrant mushroom” or “delicious mushroom”. It is the second cultivated mushroom in the world after the champignons.
Oriental cuisine in the shiitake is eaten fresh or dried. With dried mushrooms generally we make broths. When eaten fresh, it is customary to bake them with other vegetables or meats at a rate of a couple of mushrooms per person daily.
It is very useful and practical to use in stews, creams and sauces.
