Lentinus edodes (Japanese shiitake mushroom or shii tree), is an edible mushroom native to East Asia. In the Japanese language (椎 茸); Chinese language is called 香菇, which means “fragrant mushroom” or “delicious mushroom”. It is the second cultivated mushroom in the world after the mushrooms.
Shiitake, like reishi and maitake mushrooms they have been widely used by Chinese traditional medicine to strengthen the immune system.
In Oriental cuisine shiitake consumed fresh or dried. Dried mushrooms with wines generally are prepared. When eaten fresh, it is customary to bake them with other vegetables or meats at a rate of two per person per day mushrooms.
It is characterized by forming hat mushrooms with dark brown to golden brown, very aromatic with a typical diameter of 7.5 to 15cm auqnue can reach 25cm. The foot is very hard and has a lighter color.
Currently, the shiitake is one of the main sources of protein in the diet of people in several Eastern countries, among which are those mentioned Japan, China and several countries of the “circle of the Asia-Pacific.” Shiitake is also one of the known kosher vegans and vitamin D (vitamin D2) natural sources.
